Water Bath Canning vs Pressure Canning What's the difference?

Water bath canning is a method of preserving highly acidic foods, such as pickles, or recipes that use pectin, like in jellies. Specialty canning equipment is not required. You can water bath can using a large stock pot with lid. Pressure canning is a method of preserving low acid foods, such as vegetables, beans, and soups. Pressure canning equipment is required.
